Gluten is from wheat.
The words gluten is vegan think your confusing the words gluten is from boiled down animal bones and gelatin gelatin.
Gluten is absolutely vegan; it’s found solely in grains. And it’s not placed in food, but many meat analogues are made with it.
As someone else suggested, you may be thinking of gelatin, not gluten.
